A craving for soup


I love soup! I think in winter I could exclusively live of vegetable soups. They are easy and fast in preparation, you can vary the ingredients as you wish, you don´t have to be precise about measurements and they always taste different (I don´t know if that to you is a plus as well...). The recipe I would like to share with you today reminds me of my (sweeeet) student life in Salzburg, when my friend Julia would prepare the soup. Well, here comes my version of her leek-potatoe soup: leek-sweet potatoe soup with sweet potatoe-chili topping (and a kiss of cream cheese)!

Soup
2 leeks
1 big sweet potatoe (use just one half cut in small bits, the other one is for the topping)
1 onion
1 garlic clove
chicken stock (quantity as to cover the vegetables)
spices

Gently roast onion and garlic in olive oil. Then add sweet potatoe and finally leek. Keep roasting a little until leek begins to soften. Cover with chicken stock and let simmer. When you feel all the vegetables are soft, purée the whole mix. Season with salt, pepper and chili flakes. Maybe a small shot of tabasco as well...


Topping
Half of the sweet potatoe, cut into very small pieces
Olive oil
Chili salt (mix of salt, pepper, chili)

Fry the sweet potatoe pieces until they are crisp and golden on the outside. Season with a good splash of chili salt. If you want you can add a little of cream cheese or sour cream or "Sauerrahm" to it. Ready!
Psss: Cut into wedges or strips, the topping also tastes great alone, as "sweet potatoe-chili fries"!

    Mein Blog ist grade erst von blog.de hierher umgezogen, weil es dort so unkomfortabel war und das hat sich... gezogen. Pfriemelei.
    Außerdem bin ich nicht immer so aktiv wie momentan - ich muß ja auch noch die Familienbrötchen verdienen. Deshalb war ich bisher nicht so viel auf anderen Blogs. Aber die vielen Kreativ-Blogs zu lesen, den Blogrolls nachzugehen, immer was neues zu entdecken... das ist eine so herrliche Form der Prokrastination, dass es fast schon Suchtcharakter hat... ;-)
